As far as pairings, while I love me some Jack/Ianto, and really don't like Jack/Gwen or Ianto/Gwen, I will read other pairings. And even write them, too, apparently. But in the end, it always comes back to Jack/Ianto for me.
When it comes to Torchwood, I will read any pairing if it's well written, and I'll write anything that strikes my fancy. But in the end, it's all about the Jack/Ianto, so I know the feeling.
And I don't read J/I just for the sake of it being J/I, it has to be well written, too (or cater to my kinks, because I've read some really shitty fics for the sake of them having my kink!).

I definitely won't like a story BECAUSE of the pairing, if the story doesn't work for me in general.
Honestly, I don't have much time to read, so I've become very selective. (I used to try to read everything, but there's just too much dreck out there.) First, I look at rating. I like 'em hot. (Sick, I'm a sick puppy.) Then, author, then pairing, then summary.
Now, if I find a fic by an author I don't know, that's J/I (and possibly OCs), NC-17, and has an interesting summary, I'll click. If all those are the same, except it's PG or G, or the pairing is not one of my favorites, then probably not.
On the other hand, some authors I will always read, no matter what the pairing, rating, or summary.
And if I click on a fic by a new author and it's crap, for whatever reason (and I'm an English teacher, so sorry, but grammar and spelling are big reasons for me to label something crap), then good luck ever getting me to click on that person's fic again.
