The possibility of sharing your stuff with your beta via google-wave is missing :D. But I guess that's understandstable since it's still in beta-phase.
I only use google-docs if I have to (because duh... might not be my computer I'm currently using or something), mainly due to the lack of formatting options (like indentation).
I actually only write with pen and paper when I'm pissed off with the computer (because hard drive went to nirvana or something and all my files are lost again) because then I always think: damn, if I wanted to destroy it completely, I'd have to burn it! :D Or sometimes I have a little notebook to keep ideas and dialogue fragments or something whenever they pop into my mind.
I tried Google Wave and it was SO distracting and weird. Granted, there were about six people in there at once, but they can see you type (and make typos). CREEPAY.
I personally found that really cool - because even if you make typos, it's possible for the others to already start typing an answer before your sentence is completely finished - much like in a real conversation. I use google wave a lot, and find it really awesome, that you can reply to anything anywhere. Or make a comment, directly at the place where it belongs; plus, if you talk about a lot of topics it's easier and better sorted than in an IM conversation.
Plus you can actually turn that off, so that the others don't see you typing in real-time, if it bothers you.
Yeah, the first time I was online simultaneously with the friend that I'm usually "waving" with, was "fun" too - we were talking about different topics all at the same time. It was fun, and creepy - but mostly fun :D. And atm we're mostly using it like a forum (because usually we're not online at the same time) - we discuss links or other stuff - and it's easier and more sorted than in the emails we wrote beforehand. I think this system will be awesome for collaborative works.
