Very interesting idea and I like the execution. The way you broke things up into small sections and giving us slices of their life within that time bubble for 8 years. I think it very realistic that eventually they would fall into a sexual relationship, even if only for comfort. Surprised they didn't get more stir crazy than they did. Also like the more practical aspects of some of this: the letters being written, what to do if one of them dies, what happens if the food runs out etc...
The last scene was also very intriguing for me in all that you hint at with Jack knowing more than he'll say to Ianto and Gwen. I like that Ianto asks Jack to leave in order to wake up Gwen and that they then get up to take a walk in the sun. I imagine it will take them a while to acclimate to being outside the time lock and being around others.
